Dashamakan Style Beef tawa – Its the famous tawa beef that we can taste in the ‘border thottam’ area of Chennai 600001. This tawa beef is famous for its prominent taste that comes from a lot of hard work that goes in to marinate the beef pieces. Each of the spice is added individually and mixed well and then goes in the next spice. This steps ensure to give a unique flavour and taste to the dish. Lets see the steps to prepare this tawa beef from the master who has been making this for the past 22 years.
Ingredients
- Beef – 2kg
- Chilli powder – 4 tbsp
- Cumin powder – 1/2 tbsp
- Garam masala powder – 1 tbsp
- Ginger – 300 grams
- Garlic – 300 grams
- Pepper powder – 3 tbsp
- Oil – 100 ml
- Salt – 1.5 tbsp
If we need to prepare just 1 kg of beef tawa for our family, please reduce the portions accordingly.
Things to be done before we start cooking
- Clean 2 kgs of beef and wash them thoroughly and cut them into small pieces.
- Take the beef pieces in a metal strainer and then keep them aside for the water to drip off completely. The beef pieces should be free of water (water – that was used to clean).
- ‘Ginger Garlic’ paste – Take 300 grams of peeled ginger and 300 grams of garlic, grind them together in our mixy jar to obtain a paste.
Steps to Prepare
1 Take a 5-litre capacity vessel, put in the cleaned (and dry) beef pieces (2 kgs).
2 Add “Ginger garlic paste” – 5 tablespoons.
Mix the contents well with our hands for about 3 minutes.
3 Now add Garam Masala – 1 tablespoon. Start to mix the masala and beef for the next two minutes.
With our hands, stir and mix the contents well.
4 Let’s add chilli powder – 4 tablespoons. With our hands, stir and mix the contents well for 2 min.
5 Add Pepper powder – 3 tablespoons. With our hands, stir and mix the contents well for 2 min.
6 Add the below and with our hands, stir and mix the contents well.
- Cumin powder – ½ tablespoon
- Salt – 1.5 tablespoon
7 After mixing all the masalas (till step 6), now it’s time to marinate.
Leave the beef pieces to marinate for the next 60 minutes.
8 Place a tawa on the stove with high mode. Let the tawa get hot.
9 Once tawa gets hot, put the marinated beef pieces on the hot tawa.
(If the tawa is small sized, cook in 2 halves, 1 kg at a time).
10 Turn the flame to MEDIUM MODE. Try to place the beef pieces in a heap. Don’t spread the beef pieces all over the tawa.
Heaping up helps to cook them very soft.
11 Pour 100ml groundnut oil on the beef pieces over the tawa. Let the contents get cooked in medium flame for the next 50 to 60 minutes.
No need to add water, the beef itself will give out little water while cooking and also the fat from beef will give little oil, this all are enough to cook the beef pieces.
12 Every ten minutes make sure to stir the beef pieces from the bottom – so that the pieces at the bottom come to the top and the non-cooked beef pieces at the top will go below to touch the hot tawa.
After 20 minutes, repeat this step every 2 minutes, so that all the beef pieces get cooked evenly.
We can serve the tawa beef after 50 minutes of cooking and this goes very well with roti, paratha.
