Things to be done before we start cooking

Cleaning the prawn (please view the video to know more about cleaning the prawns)

  • Use a suitable scissor and trim off all the legs.
  • Using the scissors, cut off the eyes and mouth portion.
  • Trim off the 2 sharp edges – one is available near the tail and another will be on head (just above the eyes) – these sharp edges may hurt our hand.
  • Next, cut the upper part of shell from head to tail, as shown in video and remove the wastage.
  • We can apply masala to the flesh inside the shell.
  • Remove all the unwanted parts – then wash and keep them aside in a plate.
  • Grind together 100 grams of ginger and garlic to obtain our ‘ginger-garlic’ paste.

Steps to Prepare

We are going to prepare 1/2 kg of prawn – so the ingredients are added accordingly –

(1)    Take a bowl, add the below into it –

  • Turmeric powder – 1/4 tablespoon
  • Chilli powder – 1 tablespoon
  • Pepper powder – 1/2 tablespoon
  • Coriander powder – 1/2 tablespoon
  • Cumin powder – 1/2 tablespoon
  • Salt – 1/4 tablespoon
  • Ginger garlic paste – 1 tablespoon
  • Pour oil – 2 tablespoons

Use a spoon and start mixing all the masala well. We can obtain a dry paste.

Next, pour 2 tablespoon of water and mix it again.

(2)    Apply this masala paste evenly on all the sides of the cleaned prawn. Please note we need to apply masala on the shells too – there will be small gaps in the shell and masala will go deep inside it too.

  • Let the prawns marinate in this masala for minimum 1 hour – we can also let it marinate for the whole night too – the flesh will get more softer and absorb more masala and become tastier.

(3)    Place a tawa on the burner – pour 50 ml of oil – let it get hot. Once the oil gets hot, turn the flame to LOW mode.

(4)    Start placing the masala coated prawn pieces one by one on the tawa with hot oil. Press the pieces gently with a wooden spatula (so that pieces touch tawa more and get fried quickly)

(5)    After 2 minutes, flip each of the prawn piece to the other side (we can use two spoons or spatulas to flip it over without breaking the prawns).

Again, press the pieces gently with a wooden spatula or spoon to get them fried evenly and quickly.

(6)    At the end, try to sprinkle few curry leaves on the tawa – prawn will get a good flavour. In a total of 5 minutes, the prawn pieces will get cooked well. Please note that the flame should be in low mode all these 5 minutes.

(7)    Transfer the fried prawn pieces to a plate – sprinkle the fried curry leaves over the pieces.

Our ‘King Prawn Fry’ is ready to be tasted.
